GREEK STROGANOFF

I love Beef Stroganoff.  It is a simple and delicious meal which when served with a side salad is a well-balanced meal.

Two tricks to make this meal less calorically dense:  Use whole wheat pasta and instead of Sour Cream, Greek Yogurt.

You can also use cube steaks with this sauce and serve it without the pasta.  Either way you choose, here is a quick, easy and delicious recipe for you.

GREEK STROGANOFF

1 LARGE ONION DICED
1 POUND LEAN BEEF CUBES OR (CUBE STEAKS IF YOU CHOOSE)
1 POUND MUSHROOMS (CHOOSE YOUR FAVORITE!)
8 OUNCES GREEK YOGURT
2 TABLESPOONS OLIVE OIL
4 TABLESPOONS WORCHESTERSHIRE SAUCE
SALT AND PEPPER TO TASTE

BROWN BEEF AND ONIONS OVER HIGH HEAT IN LARGE FRYING PAN.  ADD MUSHROOMS AND COOK JUST UNTIL LIGHTLY BROWNED.  ADD WORCHESTERSHIRE SAUCE AND YOGURT AND REDUCE HEAT AND COOKED JUST UNTIL WARMED THROUGH.

Sour Cream    492 in 8 ounces cultured sour cream  Reduced Fat Sour Cream 327 8 ounces
Greek Yogurt  FAGE 0% fat   - an AMAZING 132 calories and the flavor is great!

We no longer use sour cream in our home for ANYTHING...I have found that you can use FAGE Greek Yogurt and get the same or better results in EVERY recipe across the board!
